Prep and Rally, a popular meal plan subscription service, was created by Dini Klein, a CA-based mom of two daughters (with another baby in the way in January!). The chef got her start working in restaurants, then with private clients and finally partnering with brands before launching her program, which is completely customizable, to give busy families unique, nourishing, and flavorful dinners all week long. “As a working mom of two very active little girls, I needed a solution for accessible meals so that dinner was on the table when my kids came home from school. Upon getting home from cooking for my clients the last thing I had the headspace for was cooking for my own family. I needed a solution so I started to implement my own unique Sunday meal prep,” says Dini.
The basics: Subscribers download a weekly menu that includes four dinner menus, and a full game plan for the week ahead. “There’s a comprehensive grocery list, options to customize the menu and offerings to make it work perfectly for YOU,” says Dini. You’re guided through a simple Sunday meal prep (less than an hour of work) with usually eight easy recipes you can store for the week ahead. “All you have to do next is exhale, feed your family homemade delicious food, and enjoy the newfound time in your week,” says Dini. We love this idea because meal prepping always saves us not only time, but also money (because we’re not tempting to order takeout). Below is a sample recipe and Prep & Rally plan for the week ahead!

Arugula Corn Pear Salad
This recipe is shared with us from Lauren K. Stein, author of Fresh Made Simple, a family-friendly illustrated cookbook. I like to make this for my family because the kids may not eat “salad” but they are almost certain to eat all the components deconstructed on their plate and some goat cheese spread on crackers.
