This summer has certainly been an “outdoor” one, and we hope to keep that trend going well into fall. That’s one of the reasons why we love food and drink writer Emily Vikre’s new book, Camp Cocktails: Easy, Fun and Delicious Drinks for the Great Outdoors, which is full of recipes that will inspire outdoor fun. From summer favorites like the berry-infused Bramble to the Fall campfire-ready Salted Nutella Hot Chocolate, this Duluth-based mom-of-one has created the perfect collection of outdoor drinks recipes. In addition to being a writer, Emily is co-founder of Vikre Distillery, an award-winning craft spirits distillery. To help us celebrate the last few weeks of summer, we’re sharing one of Emily’s favorite seasonal recipes below—Strawberry Fields Cocktail Recipe.
Strawberry Fields
When we are grilling, I love to grill skewers of strawberries to serve over ice cream for dessert. Strawberries and ice cream is my three year olds ALL TIME favorite food! For myself and other grownups, I also like to use a few of the grilled strawberries to make this delicious, fruity riff on a margarita.
For 1 cocktail
1 grilled strawberry*
2 oz. silver tequila
3/4 oz. fresh lime juice
1/2 oz. St. Germain (or other elderflower liqueur)
1/2 oz. simple syrup (equal parts sugar and water, dissolved into a syrup)
Gently muddle the grilled strawberry in a shaker. Add the tequila, lime juice, St. Germain, and simple syrup. Fill the shaker two-thirds full with ice, seal, and shake until well chilled. Double strain into a cocktail glass. I usually serve this drink up but you can also serve over ice. Garnish with a fresh strawberry, if you’re feeling fancy!
*To grill strawberries, thread whole strawberries onto a skewer and place them over a heated grill. Grill over medium-low heat, turning occasionally, until the berries are softening and juicy. (This can take anywhere from 2-10 minutes depending on how low you are keeping your heat.) Allow to cool before using.
